Cookie Jar

My cookie jar

On Tuesday I went on the hunt for a cookie jar to keep all my baking on display. Now I tend to like things a little more whimsical (of course) and tend not to go for the ordinary. What I found is a glass cake dome. Now it does take a little more work to stack the cookies on the plate so they fit under the lid; but at least this way I can use it for more than cookies. Cakes, cupcakes, appetizers or when not in use fill it with Christmas decorations. It works as a dramatic centre piece, even when empty!

Honey Lace Cookies

Honey Lace Cookie sandwich

I love when you can make something so delicious with 4 ingredients. These Honey Lace Cookies are thin, sweet and chewy and I have decided that these are my new favorite recipe! There are so many different uses for these and when they come out of the oven hot you can shape them any way you can imagine.
I left a few smaller ones to eat plain or to sandwich with cream. I baked some larger ones and played with the cooking time. I made some a little darker and kept some a little lighter. I can roll them in a cigar shape and either dip in chocolate or fill with cream, shape them into an edible bowl for berries or ice-cream or leave flat and use as a beautiful garnish.

Friday Night Recipes

Yes I understand most people like to reserve their Friday nights for going out, partying, bar hopping etc. Tonight for me was reserved for my baking and cooking for the week and doing so while watching some reality tv of course. I got the inspiration for two of the recipes from Bethenny Frankel:

Joyful Heart Muffins
Banana Oatmeal Chocolate chip Cookies

She has come up with dessert recipes that have healthier ingredient substitutes such as, raw sugar, soy milk and vegan chocolate chips. You can’t really taste the difference between these muffins and cookies compared to the others that I’ve made. I also have provided my recipe for Banana Bread (mentioned here) at the end of this post. So I may have not gone out tonight but I have accomplished a lot!

Joyful Heart Muffins

Banana Bread...better than Starbucks

Oatmeal Banana Chocolate chip Cookies

Banana Bread

2 cups flour
1/2 cup sugar
3 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

Beat together

1 egg
3/4 cup milk
1/4 cup oil or melted margarine
1 1/2 cups mashed ripe banana (about 2 )

Add liquid ingredients to dry ingredients and beat for about a minute. Batter will be lumpy. Put into greased loaf pan and bake at 350 for 65 minutes.

Baked Apple Fritters

Baked Apple Fritter and Hot Chocolate

I am definitely enjoying making/baking items that I would buy on a weekly basis. Apple Fritters are something I would usually buy from Starbucks along with a latte. Since I know how to make most caffeinated beverages that you could order at a Starbucks I thought I would tackle the items in the glass case as well! Chocolate cookies, check. Banana loaf, check. Muffins, check. The only thing that I had yet to try making was the gooey Apple Fritter. Since deep-frying anything scares me I searched for a recipe that would allow me to bake them instead. The only time consumed is waiting for them to rise (twice) other than that they came together pretty quick!

Now to learn how to make a Cinnamon Dolce Latte and I’m set.
