Italian Wedding Soup

During the winter I feel the need to cook large batches of meals to freeze just incase I get snowed in and can’t make it to the grocery store. This is especially true when I make soups or stews in my slow cooker. Now I have never been snowed in but we can all hope right? Trust me you’ll want to be at my place when that happens! Monday I made Broccoli & Cheese soup and today, for the first time, I made Italian Wedding Soup. I combined these two recipes (found here and here) and produced a delicious, tummy warming soup. The best part is I have left over meatballs that I threw in the freezer
for a fast dinner of spaghetti and meatballs!

S’mores Cookies

S'mores Cookies

The best thing about these S’mores Cookies is that they are a non-messy version of the campfire treat. No sticky fingers or burnt marshmallows, just a small bite treat that tastes like the real thing! You don’t need a fire, only a broiler and a watchful eye. These were part of Christmas cookie packages that I gave out to friends (mentioned here) along with Honey Lace cookies made two ways, Red Velvet Truffles and White Chocolate Cranberry Cookies. I hope everyone enjoyed their treats!

Mini Maple Pancake Muffins

Maple syrup for dipping

For someone who doesn’t like breakfast food that much I was excited to find this recipe for Mini Maple Pancake Muffins. They are easy to pack for a snack at work (or home) and were a hit last month at our girls brunch. The best part is dipping them into your own mini bowl of maple syrup! You can use the recipe for the regular, made in the frying pan pancakes or leave out the chocolate chips…but why would you?

Cozy up…

Red Velvet Truffles

Red Velvet Truffles

Everything is better mini, right? These guys are a mixture of red velvet cake and cream cheese icing and covered with melted chocolate (and sprinkles!) Behind the scenes these did not come together too easy. I added too much icing, burnt the first batch of chocolate in the microwave and tried to use white chocolate with no luck. I threw them back in the freezer, took a breather than started again. This recipe is definitely something that I’ll get better at with practice…a lot of practice!
