Dinner for my Valentine

I hope everyone had a great Valentine’s Day! I had two great Valentine’s Days! We did two dinners, one each, Dinner Party Wars style. The first was mine and I made a classic roast chicken with stuffing and a side of lemon butter green beans. Each dish is easy even for the non-cook and it always impresses.

The next dinner I hate to say it but I was completely shown up…the meal I was treated to was definitely the winner and could call itself Dinner Party Wars Champion. Filet Mignon with garlic prawns, and asparagus with prosciutto and orange mayo. I got a front row seat to watch my martinis being shaken and found a new favorite drink! My contribution to the evening was a strawberry mousse cake that I brought which happened to fall over in the box and lost its visual appeal.

So I will admit that I lost (even though I don’t want to) but I will ready for the next round!

Chicken/Turkey Stuffing

3 cups of bread cubes
1/2 a white onion, chopped
1 tbsp butter
1 celery stalk, chopped
boiling water
poultry seasoning

On medium heat melt butter in a pan and add chopped celery and onion. Cook for about 5 minutes, until softened. Place bread cubes in a boil and add boiling water just to soften. Make sure the water is absorbed by the bread. Add your sautéed onions and celery and mix. Add poultry seasoning to taste. You can either stuff the bird or bake it in a dish to heat through. Enjoy!!
