ice-cream sandwiches have been on my to do list for awhile now. When I read the recipe and realized how easy they were I just needed to carve out time to get them baked off. The best thing is you can assemble them as needed so there isn’t much work after the cookies are out of the oven. This way you can test out different flavours of ice-cream as you go!
Since I made these on my Dad’s Birthday I’m dedicating these to him. Happy Birthday DAD!!!
