Made for a BBQ where we served real mini burgers; these just went with the theme!

Earl Grey Tea Cookies

To continue on with my wedding shower planning I tried out a cookie recipe that might just make the menu. These Earl Grey Tea Cookies are more of an adult cookie with a smokey flavor of ground earl grey tea and a hint of citrus. Since I am planning a tea party luncheon for the shower these of course make perfect sense! When I opened the oven after they were done baking there was no way I could miss the aroma of tea and I think they may have just made the menu!

Ice-Cream Sandwiches

Homemade ice-cream sandwiches have been on my to do list for awhile now. When I read the recipe and realized how easy they were I just needed to carve out time to get them baked off. The best thing is you can assemble them as needed so there isn’t much work after the cookies are out of the oven. This way you can test out different flavours of ice-cream as you go!

Since I made these on my Dad’s Birthday I’m dedicating these to him. Happy Birthday DAD!!!

My Birthday Cake

My 28th Bday Cake

I celebrated my birthday on Saturday night with close friends, food and board games (not bored games, Alex.) I wanted to try something different for my cake so I made Chocolate Marshmallow Cake. I received a chocolate recipe book for Christmas and this is the first recipe I choose from it:

Chocolate Marshmallow Cake

Ingredients
6 tbsp unsalted butter
1 cup superfine sugar
1/2 tsp vanilla extract
2 eggs, lightly beaten
85g semisweet chocolate broken into pieces
2/3 cup buttermilk
1 1/4 cup self rising flour
1/2 tsp baking soda
pinch of salt

Frosting
175g marshmallows
1 tbsp milk
2 egg whites
2 tbsp superfine sugar

Cream the butter, sugar, and vanilla together in a bowl until pale and fluffy, then gradually beat in the eggs.

Melt the chocolate in a bowl over a pan of simmering water. Stir in the buttermilk gradually until well combined. Let cool slightly.

Sift the flour, baking soda, and salt into a separate bowl. Add the chocolate and the flour mixtures alternately to the creamed mixture, a little at a time. Spoon the mixture into a greased oven-proof bowl and smooth the surface. Bake in preheated oven, 325 degrees, for 50 minutes.

Meanwhile, make the frosting. Heat the marshmallows and milk very gently in a small pan until the marshmallows have melted. Remove and let cool. Whisk the egg whites until soft peaks form, then add the sugar and continue whisking until stiff peaks form. Fold into the cooled marshmallow mixture.

When the cake is cool cover the top and sides with marshmallow mixture and top with grated chocolate!

Engagment party

Merry Christmas and Happy New Years to all of you! It feels great to be back after a short hiatus from SweetWhimsy. I hope everyone indulged in the things they love over the holidays; I know I did! One of the reasons that I’ve been so busy is that I had the honor to bake the desserts for my best friends engagment party this past Sunday. (Definitely not as busy as her Mom who was cooking for the event ALL night long.) I choose 3 desserts to make: Red velvet truffles, Marbled cupcakes with Cream cheese icing and Sugar cookies with Buttercream icing. I wanted them to look whimsical as always so I got the dessert cards made last minute. This way everyone knew what they were nibbling on and the cards gave it a more professional look. Congrats to the happy couple!
