The last time I wanted to start off the week on a good note I made pizza! (seen here) Since this past weekend was not that great I wanted to make sure as of Monday I would shake off the bad vibes and create some happiness! I was inspired to make a Wheat-Free Vegan pizza by a friend who has been experimenting with a wheat-free diet. To save time I doubled the recipe and baked the crusts off and froze them for easy assembly later on. You can make 2 full pizzas or 4 personal sized out of a doubled recipe. Having them ready to go in the freezer will deter you from ordering out when you have a craving and help you stick to a healthier wheat-free option. Good pizza = great week!
